Soul Food In Stilettos: Vegetable Crab Soup Recipe

-->
So, last night we were braving Hurricane Sandy and my mother-in-law, Charlotte Hall, decided to whip up some homemade Vegetable Crab Soup!! I never thought it was this easy to put together...You know I had to be in the kitchen to record the process from start to finish!  Take a look at the video, and send in your picture if you make it.

Ingredients:

  • 1 Bag of celery
  • 2 Large Yellow Onions
  • 1  Dozen Potatoes
  • 2- 20 ounce cans of tomato sauce
  • 8 Ounces of Tomato Paste (the more tomato paste the more of a tomato taste you will have)
  • 1 bag of No Yolk Noodles
  • 4 Cans Chicken Broth
  • Seasonings: 4 Bay Leaves, Parsley, OBay Seasoning, Salt, Pepper, Teaspoon of Red Pepper
  • 5 Pounds of Crab Meat
Directions:
  • Chop your celery, onions, and potatoes
 Let’s create the soup base!
  1. Use about four cans of Chicken Broth and add equal amounts of water into a pot.
  2. Add your seasonings to the base
  3. Add your raw vegetables: Celery, Onion, Potatoes
  4. Put your pot on High heat and cover and bring it to a boil.
  5. Once your base begins to boil add your Tomato Sauce and Tomato Paste, stir
  6. Add your bag of frozen vegetables, Cover and Bring to a boil
  7. Once your soup has come to a boil, add in your crabmeat and noodles.
  8. Cook until noodles are tender. (This bag of noodles required a cook time of 10 minutes, we cooked it for 7 minutes because the noodles will continue to cook in the hot soup, however, use your own discretion and taste)
  9. Let sit for about 15 minutes before serving.  Allowing the soup to sit over night will allow the flavor to pop.

Shrimp & Tomato Basil Scampi

This shrimp scampi recipe is not only tasty but incredibly easy to make!  A quick recipe made with shrimp, butter, basil, oregano, lemon pepper, & stewed tomatoes.  I didn't use White Wine in this recipe but I explain where you can add it in easily.

What Do You Need?

  • 1 pound of frozen shrimp (in the video I'm using 2lbs of shrimp)
  • One 15oz can of pre-seasoned basil Stewed Tomatoes
  • 2 Tablespoons Basil
  • 2 Tablespoons Oregano
  • 2 Tablespoons Lemon Pepper
  • 2 Tablespoons of sugar
  • 2-4 Tablespoons of Butter or Margarine
**Extra
  • You can eat the Shrimp Scampi over pasta. You can choose any pasta you like, I am using a bow tie pasta in this video, but Angel Hair pasta is most popular.

Grab Your Stilettos and Let's Get Cooking!

Shrimp:
  1. Thaw your frozen shrimp in a bowl of COLD water.  Using warm water will begin cooking your shrimp and you will have rubbery shrimp scampi...yuck! Thaw for 15 minutes.
  2. Once the shrimp has thawed decide whether you want to take the shell off or cook it with the shell on (in this video I remove the shell because it's cleaner with my children, lol)
  3. Melt 2 tbsps of butter in your skillet.  I don't use White Wine in my video but this is where you can add the white wine.
  4. Once the butter has melted add your shrimp. Season your shrimp with basil, oregano, and lemon pepper (you can add lemon juice too)
  5. Cook shrimp until pink.  This doesn't take long, so be careful not to overcook your shrimp.
  6. At this point your Shrimp Scampi is done.  You can eat it like this or continue to with the tomato sauce.
Sauce:
  1. Melt 2 tbsps of butter in your skillet
  2. Add in your can of stewed tomatoes
  3. Season your tomatoes with sugar, basil, oregano, & lemon pepper
  4. Cover and simmer for about 10 minutes.  You are turning these tomatoes into a sauce so you may need to cut them a bit as they cook (as I do in the video).
Serve your Shrimp as is or add a little more substance to your meal and serve over pasta :-)

Three Bean Turkey & Sweet Sausage Chili

Learn how to cook Tamika's family famous, Three Bean Turkey & Sweet Sausage Chili. We know...it's a tongue twister, but the taste is a CROWD PLEASER! This meal takes approximately 30 minutes to prepare and can be made under $10.

What Do You Need?

You will need a Skillet & Crock Pot

-1 Pound of Ground Turkey (You can substitute Turkey for Ground Beef)
-Italian Sweet Sausage (You use Turkey sausage)
-One 15 oz Can of Tomato Sauce
-One 15 oz Can of Diced Tomatoes (I prefer to use the pre-seasoned Basil, Garlic & Oregano)
-Onion
-Bell Pepper
-Sweet Corn
-1 Chili Seasoning packet (McCormick makes these)
-1 Can Pinto Beans
-1 Can Black Beans
-1 Can Dark Kidney Beans
-2 Tablespoons of Butter or Margarine
-Tortilla Chips or Rice

Let's get cooking...in stilettos of course!!

  1. Put 1 tablespoon of butter or margarine to oil your skillet
  2. Cut your Sweet Onion and Bell Pepper to your liking. I like mine chunky. I only used half of a bell pepper and about 1/4 of the onion
  3. Add your onion and bell pepper to the skillet (ummmm, doesn't that smell good?). Cook the onion and bell pepper down to your liking. I prefer to keep mine a little crunchy because I like the burst of flavor when I bite into them.
  4. Pull the sausage from the lining and add to the skillet.
  5. Once the Sausage is cooked thoroughly remove your sausage, bell peppers, & onions from the heat.
  6. Cook your Turkey meat thoroughly.
  7. Add the Sausage, Bell peppers, and onion to the Turkey meat.
  8. Mix your chili seasoning into the meat
  9. Mix in your Tomato Sauce & Diced Tomatoes
  10. Add your Beans (Kidney Beans, Black Beans,  Pinto Beans).  For my family, they don't eat a lot of beans so I use half of a can of each bean and freeze the other half for another meal.
  11. Add your Frozen Corn . This prevent the corn for being soggy and add an incredible burst of sweetness when you bite into.
  12. Grab your Crock Pot. Use it to make a chili and cheese "lasagna." Start with a small layer of cheese, then add chili, so on and so forth. You can let your chili simmer for 30-60 minutes, or serve it immediately.

In the winter I serve Chili over Rice with a side of cornbread, in the summer or for a fun party dish, I use Tortilla/Nacho Chips...the kids love it!
